Have you considered what sort of binding your book will have?  There are
bindings that fairly well accommodate a center-fold, double page photo, but
those are generally bindings used with magazines.  If your book is many
pages, the binding my cause significant detail near the center of the photo
to be hidden from view in the binding.  This is something to consider BEFORE
electing to do double page photos.  Talk to your printer, or any book
printer, for advise regarding how this should be done and if it is right for
your project.

Also,  your printer should be the one to tell you how she/he can best handle
your input to her/him with regard to page layout format.  I send my 50-60
page magazine to my printer in a 1-up format and he handles the combining of
the pages necessary to burn the four up plates for printing.  Of course, two
pages are upside down to the other two on the plate.

Now, if your printer is using all digital printing methods, his needs might
be different from my printer who is using an offset type press.

These are things you should know before getting too frustrated with page
orientation in your file.  Hope this helps.
