What you really have is many ways to accomplish this:
There actually is a way to grab the corner (any corner) and stretch 
whatever way you want. Perhaps a bit more tricky to locate with your 
mouse arrow than you expect.
But if you lock the proportion in Image or in XYZ, you can either use 
the built-in arrows at the side, the up and down arrows on the keyboard, 
or the mousewheel. I like to work with points so that the gradations are 
finer.

Generally I find that grabbing and stretching is less precise than I 
would like and end up tweaking in Properties anyway.
