If you embed fonts, you include the font information in the PDF --
basically little programs to create the individual glyphs. This will
then make sure a font is rendered even if the system showing the PDF
doesn't have it. A subset only includes the part of the font that is
used in the PDF.

Outlining is a completely different situation, where you turn the glyphs
into small vector graphics in the PDF.

One advantage of embedding the fonts is that you can then save the text
of the PDF as text from the PDF reader. If you outine them you cannot.
