First of all, don't go to the Color tab. This is for the background and 
border of the frame.

The color selector for text is in the Text tab of Properties. For the 
body of the glyph, it's the fill icon labeled selector. The pen is for 
the outline and any shadow that might be selected, so if you haven't 
selected either, that's why it's grayed out.
